I discovered a great new, EASY way to have pork chops from H. Anton of North Dakota in a Cooking for One or Two Cookbook I like.

The prep is 5 minutes, tops, and it is SO tasty! My husband and I both raved about it.

You can use lemon slices, or you can just use a splash of bottled lemon juice.

We love onions, so instead of a large onion, I use an extra large onion or 2 small onions and double the sauce ingredients! The sauce is delicious over rice or mashed potatoes.

I changed her directions just a bit to be easier.

Double or triple this recipe if you need more than 2 servings! It is worth having leftovers! This recipe is a keeper!

In the above left picture I used boneless pork chops, and in the right picture I used pork chops with the bone.

Sweet and Tender Oven BBQ Pork Chops

Ingredients

  • 1/4 teaspoon salt
  • 2 tablespoons brown sugar
  • 2 tablespoons ketchup
  • 1 onion large, sliced
  • splash lemon juice and/or 2 lemon slices
  • 2 pork chops boneless or on the bone

Instructions

  • Preheat the oven to 350°.
  • Place a piece of non-stick foil or regular aluminum foil on the bottom of an oven-proof pan or casserole dish. Very, very lightly grease or spray the foil with one spritz.
  • In a small bowl, whisk together the salt, brown sugar, ketchup, onion slices, and lemon juice.
  • Place the pork chops on top of the foil.
  • Spread the sauce mixture on top of the pork chops.
  • Bake at 350° for 30 minutes or until the inside temperature of the pork chops is 160°. If you greased or sprayed the pan too much, you will have extra liquid in the pan. Drain it before serving.

EXTRA TIP:

FOR EXTRA DELICIOUS SAUCE:  Double the sauce ingredients if you’d like extra sauce to use over rice or potatoes.

FOIL:    Instead of using aluminum foil, you can just very, very lightly grease or spray an oven-proof pan or casserole dish.  I like to use non-stick food grade foil for easy cleanup!
