One of my very favorite ways to have chicken is stewed in tomatoes! It is so simple and so amazingly delicious! No vegetables are in it except tomatoes, so it does not taste like a cacciatore. But stewing the chicken in tomatoes gives it a whole new tender texture and great taste throughout the meat!  This is one of my old-world recipes I just love!

My great-aunt Concetta made this for me when she knew I would be coming and she was sure to put in my favorite dark meat pieces!  I updated her recipe just a little. Sear the chicken in oil, then drain all the remaining oil, which is pretty much what you started with.  Mix everything together and let it simmer on low heat for at least 3 hours. That’s it!

I think there is something about using the chicken with the bones that flavors the tomatoes so much.  Go ahead and pick up the chicken pieces with your fingers… a little messy, but enjoyable! It is not quite the same with boneless chicken, although it is still great. If you never had stewed chicken in tomatoes before, try it! I love to serve this with any kind of flat noodles. Enjoy!

Serves: 4

INGREDIENTS:

1/4 cup oil
1/4 teaspoon black pepper
4 cloves garlic
2 pounds chicken, with bones in and skin left on
16 peeled tomatoes, or 2 (28-ounce) cans whole tomatoes
1 teaspoon salt
2 tablespoons fresh parsley, or 1 tablespoon dried parsley
2 tablespoons brown sugar 

DIRECTIONS:

1. In a large sauce-pot, heat the oil, garlic, and black pepper on medium heat for about a minute.
2. Add the chicken pieces, and sear them on all sides. (about 5 minutes)
3. Drain the oil.
4. To the seared chicken in the sauce-pot, add the tomatoes, salt, parsley, and brown sugar, mashing the tomatoes and stirring to mix well.
5. Bring the heat down to low, cover the sauce-pot half-way to allow a little steam to escape, and let this simmer for 3 to 4 hours.
