Chicken a la King

chicken a la king  “This classic dish has gone through many versions and updates over the years. Here is the classic, plain, simple, but tasty version of Chicken a la King I grew up with.  We had it plain like this over toast, or fancier with vegetables added and curly noodles.  It takes no more than ten minutes to prepare. Choose whether you want to serve it over toast, noodles, or rice. You can also add some vegetables in it to make it a one-pot meal.  Good suggestions are: mushrooms, carrots, peas, broccoli, or string beans. This has always been a favorite of my kids and requested by my husband often.  Enjoy!”

Servings: 4      Preparation Time:  10 minutes


½ cup butter or margarine

¾ cup flour

¾ teaspoon salt

½ teaspoon pepper

1½ cups milk

1¼ cup chicken broth

2 cups  chicken, cooked  and cut into chunks


  1. Make a roux:   In a medium saucepan over medium heat, melt the butter.  Add the flour, salt, and pepper until it makes a paste, (the roux).
  2. With a whisk, stir the milk and chicken broth into the roux until smooth.
  3. Add the chunks of cooked chicken and cook two minutes more to heat the chicken through, stirring constantly.
  4. Serve the chicken a la king over toast points, noodles, or rice.
