This Tortellini Alfredo Tortellini Alfredo, is light, not sickeningly heavy. It’s cheese sauce is so delicious!

It is FAST and EASY to do! You make it in UNDER 10 MINUTES while the tortellini is boiling!

Peas is classic in Tortellini Alfredo, but I don’t always use them. Bill doesn’t like peas but he likes them in this! I use whatever vegetables I happen to have or want! Sometimes I might add in some cubed ham or chicken. This version has the traditional peas, but I love adding fresh spinach and mushrooms.

I have tried other recipes, but this one is the keeper I’ve been using for over a decade, the taste is so light and good!

A lighter Tortellini Alfredo that is so-oo good! I have tried others, but this one was the keeper! The sauce is light, only using Romano cheese and it is wonderful!

Ingredients

  • 1 package (14-19 ounces) cheese tortellini frozen or fresh, or your choice of filling
  • ½ cup onion sliced
  • cup butter
  • 1 ½ cups peas frozen, or vegetables of your choice
  • 1 package (8-12 ounces) spinach fresh baby spinach
  • 1 cup mushrooms fresh, sliced or whole
  • 2 cups heavy cream
  • ¼ teaspoon black pepper
  • ¾ cup Romano cheese grated, or parmesan cheese

Instructions

  • 1. Boil the tortellini as directed on the package.
  • 2. While the tortellini is boiling, in a large skillet, sauté the onions in the butter just until soft, not brown.
  • 3. Add in the frozen peas, fresh baby spinach, and mushrooms and stir a few minutes until the spinach is tender.
  • 4. Stir in the heavy cream, black pepper, and Romano cheese until it’s heated through. (about a minute or 2.)
  • 5. Drain the tortellini and add it to the cream sauce.
  • 6. Serve with additional grated cheese, if desired.

EXTRA TIP:

VARIATION:   You can change the vegetables, or the type tortellini, or the grated cheese to whatever you like or feel like! 
SPINACH:   If you use the fresh spinach, you might want to cut off the stems first.

    This sounds so good! Will have to try it on a cool day .. up in the 80’s last week … should be cooler this week!

    Planning to head up to the North East on June 17th. We are taking 2 days to get there!

    Heading up to my home town in the Adirondack Mts and staying with Jerry’s Sister and BIL for 10 days and then head over to Jim, Tanya and Lyonya’s for , not sure how long. Will celebrate Jim’s birthday with them on July 1st!

    Our Andy needs to have surgery on his back L4 & L5. He is really nervous about it and I asked him if he would like Dad and I to come and stay with him when he has it, he was so grateful! He misses our Tricia so much and so does Josh. Josh is getting some counselling at college but Andy is not and he needs it!

    Andy told me he is not going to the church that he and Tricia went to, Plainedge Baptist, when I asked him why, he said it made him feel too lonely.

    He is now going to the OLD Wantagh Baptist Church and LOVES it! He said he sat and cried his first week there as he felt God for the first time in a long time. My heart hurts for him and Josh, so much. I love those two and there isn’t a day that goes by that we don’t miss our Girl along with them!

    As soon as we find out the date …sometime in July is all he knows right now , I will let you know. We would so much like to get together with your WHOLE family and meet the spouses and the kids! Brian said he wants to try and do it when we come up … what do you think ???

    Wendy, Joel, Jared, Justin and Hayley were down last month for a week and we had a ball. Plan to spend a week with them and will stop and see Alyssa Joy, Rob and Robin Joy on our way home in August sometime.

    Thanking God so much for the ability to do this trip. We haven’t seen our Jim and family in 2 years now. We have seen them on Duo (facetime) but it isn’t the same as giving and getting a hug !!

    Love you and Bill and so look forward to seeing y’all some time. WE will HAVE to plan a Euchre night !! I know Bill and I will beat you and Jerry !! 😉
