Waldorf Salad

Waldorf Salad, that simple mixture of apples, raisins, walnuts, and celery, with a  slightly sweet, sour cream dressing has been a favorite for generations!  It originated at the famous Waldorf-Astoria Hotel in New York in 1893.  

Waldorf Salad shouldn’t be swimming in a lot of dressing, and this recipe doesn’t do that.  I like the using different color apples and dark raisins for contrast.  It is delicious served with chicken or turkey chunks in the salad or on the side with lettuce for a meal. 

Naturally variations of the Waldorf Salad have appeared through the years and people have added whatever fruit, dried fruit, or nuts they like.  Some recipes use honey and others use yogurt. So change it up if you wish, but this classic version is my preference. Enjoy!

Serves: 6

INGREDIENTS:

2 cups chopped apples, skins left on
1/2 cup diced celery
2 teaspoons lemon juice
1/2 cup raisins
1/4 teaspoon salt
1/2 cup mayonnaise
2 tablespoons confectioners’ sugar
1/4 cup sour cream
1/3 cup chopped walnuts

DIRECTIONS:

1. In a medium bowl sprinkle the apples with the lemon juice, then mix in the celery, raisins, and salt. Set aside.
2. In a large bowl whisk together the mayonnaise, sugar, and sour cream. Add in the apple mixture and toss lightly with a fork.
3. Using a spatula, fold in the walnuts.
4. Cover and chill in the refrigerator for at least one hour before serving to let the flavors meld together.

      Great, Margo! Try it! This is a wonderful base dressing that is right in the middle… not too sweet… and not too… gloppy! 🙂 So you can really taste more fruit than dressing.
