Triple Chocolate Zucchini Muffins  2-Week Refrigerator Bran Muffins


Here is a hint for baking REALLY HIGH muffins or cupcakes, any flavor, any recipe!

Preheat your oven to 400º or 425º, no matter what temperature your recipe says.

Bake your muffins or cupcakes at this HIGH HEAT for 8 minutes, then LOWER the heat to whatever temperature your recipe says and finish the remaining time suggested in your recipe.

Do this for every muffin or cupcake recipe you have and you will get nice looking, high-tops just like the  ones in the bakeries…except  yours will have good looks AND taste, because yours will be homemade! 

This hint is tried and true by me and it really does work!

    to Margart: I know! Was it a pro-baker’s trade secret all these years? ha-ha! Or maybe it was just recently discovered? But I doubt that, since bakeries have been baking them high for a few decades now. All I know is, I am glad I discovered thsi trick. It really does work! 🙂 I use it for all my muffins and cupcakes now.
