Creamy Coleslaw

This creamy and tasty coleslaw is better than KFC or any deli coleslaw! It took me years to get this good enough for Bill’s taste since he says he is a coleslaw connoisseur!  This is the way he likes it, very finely chopped, creamy, and sweet and tangy at the same time.  

It is very easy to make and one hundred times better than any coleslaw dressing you can buy in a bottle. You can buy a 32 ounce bag of fresh shredded coleslaw in the produce department if  you want to make it even easier.  But I still suggest grating the pre-packaged bag in a processor also.     Enjoy!”

Servings:  14          Yield:  7 cups

INGREDIENTS:

1 small cabbage

2 carrots

2 cups mayonnaise

4 tablespoons white vinegar

4 teaspoons yellow mustard

4 teaspoons sugar

2 teaspoons celery seed

DIRECTIONS:

  1. Grate the cabbage and carrots in a food processor until very fine and put into a large bowl.
  2. In a medium bowl, mix together mayonnaise, white vinegar, yellow mustard, sugar, and celery seed.
  3. Pour the dressing into the large bowl and mix well.
  4. Refrigerate.

  2. ahaha! He loves loves loves coleslaw! I cannot emphasize how much! I was amazed at the high calories for a half cup! Try the light mayo…. even though I am not a fan of it! LOL I would probably forgo about 100 calories somewhere else in the day to eat the regular mayo! LOL

  3. It sounds wonderful. I knew Bill was my Euchre partner for a reason and now I know we both love coleslaw! Do you think it would taste as good if I used a light mayo? I might have to make two batches and see if it is as good. Thanks for recipe.
