INGREDIENTS:
1 ½ cups butter, softened
1 cup sugar
2 eggs
1 tablespoon vanilla extract
6 tablespoons orange juice
2 teaspoons baking powder
3 ½ cups flour
1 cup cake flour
½ teaspoon salt
1 can (12 ounces) fruit filling
DIRECTIONS:
- Preheat oven to 375°.
- Lightly grease or spray cookie sheets.
- In a large bowl, combine butter and sugar and beat until smooth.
- Mix in eggs, one at a time, then add orange juice, and vanilla. Mix well. Set aside.
- In a small bowl, sift together, flour, cake flour, baking powder, and salt.
- Gradually add to large bowl mixture until a dough forms, being careful not to over mix.
- Shape dough into a ball and wrap in plastic wrap.
- Refrigerate dough for at least 2 hours.
- Sprinkle a board with a little flour, and roll out half the dough to one-quarter inch thick.
- Using a three-inch round cookie cutter, cut out circles and place them on the cookie sheets.
- In the middle of each circle, place one teaspoon of the filling. Pinch 3 sides together to form a triangle, leaving some of the filing exposed.
- Bake for 8-10 minutes, until bottoms are light brown.
- Cool on wire rack.
- Store cookies in airtight cookie tin.
