“Nothing but the homemade version of Hamantaschen will do! You will not want to eat store bought ones again.
These are the traditional Jewish cookies for Purim. Some say they represent the little triangular-shaped hats the defeated King Haman wore. The story is in the book of Esther, where the Jewish Queen saved her people from slaughter.
There are two kinds of flour used in this recipe.  Poppy filling is the oldest and most traditional filling, but today there are many varieties of fillings used. My personal favorite is the prune filling.
Maybe the reason I love Hamantaschen so much is because I am a huge fan of pastry dough! These are delicious! They really are not hard to make. I have fun making them. They come out perfectly every time.    Enjoy!”

Servings: 48       Bake Time:  8-10 minutes

INGREDIENTS:

1 ½ cups butter, softened

1 cup sugar

2 eggs

1 tablespoon vanilla extract

6 tablespoons orange juice

2 teaspoons baking powder

3 ½ cups flour

1 cup cake flour

½ teaspoon salt

1 can (12 ounces) fruit filling

DIRECTIONS:

  1. Preheat oven to 375°.
  2. Lightly grease or spray cookie sheets.
  3. In a large bowl, combine butter and sugar and beat until smooth.
  4. Mix in eggs, one at a time, then add orange juice, and vanilla.  Mix well.  Set aside.
  5. In a small bowl, sift together, flour, cake flour, baking powder, and salt.
  6. Gradually add to large bowl mixture until a dough forms, being careful not to over mix.
  7. Shape dough into a ball and wrap in plastic wrap.
  8. Refrigerate dough for at least 2 hours.
  9. Sprinkle a board with a little flour, and roll out half the dough to one-quarter inch  thick.
  10. Using a three-inch round cookie cutter, cut out circles and place them on the cookie sheets.
  11. In the middle of each circle, place one teaspoon of the filling. Pinch 3 sides together to form a triangle, leaving some of the filing exposed.
  12. Bake for 8-10 minutes, until bottoms are light brown.
  13. Cool on wire rack.
  14. Store cookies in airtight cookie tin.
