Butterballs  “Butterball cookies are famous around the world.  They are also known  as Russian Tea Cakes, Mexican Wedding Cakes, and many other variations from other countries. When my mother could trust me by myself in the kitchen, this was one of the first recipes I made back in the 1960’s.  I haven’t found another butterball recipe with this same great buttery taste.  It is very delicate and not overpowering with sugar.    Enjoy!”

INGREDIENTS:

1 cup butter
4 tablespoons confectioners’ sugar
1 teaspoon vanilla extract
2 cups flour
1 cup chopped walnuts
3/4 cup confectioners’ sugar for dusting

 

DIRECTIONS:

 

1. Preheat oven to 350°.
2. In a large bowl, cream the butter and confectioner’s sugar.
3. Add the flour and walnuts and mix well to form a dough.
4. Using a tablespoonful of dough, shape into small balls.
5. Place balls 1 inch apart onto ungreased cookie sheets.
6. Bake for 10 – 15 minutes or until bottoms are golden brown.
7. Carefully remove cookies to wire rack.
8. While cookies are still a little warm, roll cookies in additional confectioner’s sugar.
9. Store cookies in a covered tin or dish.
