Ingredients
4bananasvery ripe
1egg
1tablespoonvanilla extract
1 1/3cupsugar
1teaspooncinnamon
1 ½cupsall-purpose flouror whole wheat
1teaspoonbaking powder
1teaspoonbaking soda
½teaspoonsalt
2tablespoonsreduced calorie buttermelted
1 ½cupsberriesany
Instructions
Preheat the oven to 350 degrees.
Add 12 liners to a muffin tin, or use a cooking spray.
In a large bowl, mash the bananas with a fork.
Stir in the egg, vanilla extract, sugar, and cinnamon.
Gently stir in the flour, baking powder, baking soda, and salt. Do not over-mix.
Gently stir in the melted butter.
Gently fold in the berries.
Divide the batter into the 12 liners of the muffin tin.
Bake at 350 degrees for 18-20 minutes, or until a tester inserted comes out clean.
Immediately remove the muffins to a wire rack.
