Ingredients
½cupbuttersoftened
1cupsugar
1egg
1tablespoonvanilla bean pasteheaping
1 ⅓cupsflour
¾teaspoonbaking powder
¼teaspoonsalt
Instructions
Preheat the oven to 350°.
With a mixer on medium speed, cream the butter and sugar.
. Beat in the egg and vanilla bean paste.
Reduce to the lowest speed and mix in the flour baking powder, and salt.
Drop by tablespoons or a #60 cookie scoop onto an ungreased cookie sheet, 2 inches apart. Optional: You can use parchment paper if you’d like.
Bake at 350° for 10-15 minutes.
Let the cookies cool in the pan on a wire rack for just a minute or two, then transfer the cookies to a wire rack to finish cooling.
Store the cookies covered at room temperature.

FREEZE: You can freeze the baked cookies or the raw cookie dough in a freezer bag or container for up to 3 months.
VARIATION: You can roll the cookies into a ball and dip into coarse sugar before baking.
