Vanilla Bean Cookies

These cookies are especially for vanilla lovers! They are crispy on the outside and chewy on the inside.  There is a lot of vanilla bean paste so you can smell that strong flavor and it tastes delicious!

Ingredients

  • ½ cup butter softened
  • 1 cup sugar
  • 1 egg
  • 1 tablespoon vanilla bean paste heaping
  • 1 ⅓ cups flour
  • ¾ teaspoon baking powder
  • ¼ teaspoon salt

Instructions

  • Preheat the oven to 350°.
  • With a mixer on medium speed, cream the butter and sugar.
  • . Beat in the egg and vanilla bean paste.
  • Reduce to the lowest speed and mix in the flour baking powder, and salt.
  • Drop by tablespoons or a #60 cookie scoop onto an ungreased cookie sheet, 2 inches apart. Optional: You can use parchment paper if you’d like.
  • Bake at 350° for 10-15 minutes.
  • Let the cookies cool in the pan on a wire rack for just a minute or two, then transfer the cookies to a wire rack to finish cooling.
  • Store the cookies covered at room temperature.

EXTRA TIP:

FREEZE: You can freeze the baked cookies or the raw cookie dough in a freezer bag or container for up to 3 months.
VARIATION: You can roll the cookies into a ball and dip into coarse sugar before baking.
