Preheat the oven to 350℉.
Grease or spray the cookie sheet pans or line the pans with parchment paper.
WITH MINI OREOS: Use a #40 medium cookie scoop to scoop 1 mound of cookie dough onto the cookie sheet; alternatively use 2 tablespoons of dough.
Place 1 mini Oreo cookie on top of the mound of dough.
With your hands, encase the mini Oreo cookie inside the dough, hiding all of the Oreo cookie. You are making a ball of dough with the Oreo cookie hidden inside!
Place the ball of dough onto the cookie sheet. Leave 2 inches between each ball of dough. They spread.
Bake at 350 for 9-11 minutes, or until cookies are just lightly golden and still a bit soft on top.
WITH STANDARD SIZE OREOS: Use a #40 medium cookie scoop to scoop 1 mound of dough onto the cookie sheet; alternatively use 2 tablespoons of dough.
Place 1 regular size Oreo cookie on top of the mound of dough.
Place another scoop of dough on top of the Oreo cookie.
With your hands, encase the Oreo cookie inside the dough, hiding all of the Oreo cookie. You are making a ball of dough with the Oreo cookie hidden inside! These will make a bigger cookie.
Place the ball of dough onto the cookie sheet. Leave 3 inches between each ball of dough. They spread.
Bake at 350℉. for 11-13 minutes, or until cookies are just lightly golden and still a bit soft on top.
Place the baking sheet on a wire rack for just 1-2 minutes, then transfer the cookies to the wire rack to finish cooling.
Store the cookies covered at room temperature.
