Ingredients
1⅔cupswaterhot
1package6 ounces Chicken Stuffing Mix, any brand
1 to 1½poundschicken breastsboneless, cut up into small bite-size pieces
saltto taste
black pepperto taste
1cupmixed vegetablesfrozen or canned, drained, optional
1can10 ¾ ounces condensed cream of chicken soup
⅓cupsour cream
Instructions
Preheat the oven to 400.
In a medium bowl, add the hot water to the stuffing mix and stir until just combined. Set aside.
In a small bowl, mix the condensed soup and the sour cream.
Season the chicken pieces with salt and pepper, and any other spices you want. Place them in a 2quart casserole dish, or 13x9-inch pan.
Spread the vegetables over the top.
Spread the soup mixture over the top.
Spread the stuffing over the top.
Bake at 400 for 30 minutes.

VARIATIONS: * Use whatever vegetables and condensed soup you like. * Skip the vegetables and serve them as a side dish. * Use your own favorite stuffing recipe! * Add slices of cheese on top of the chicken. *Sauté the chicken first in oil/butter to brown. LEFTOVERS?: FREEZE in a freezer container for up to three months.
