2eggs
⅔cupsugar
1teaspoonanise seeds
1cupsflour
Instructions
Preheat the oven to 375°.
Spray a small baking sheet pan with butter spray, (You can use real butter rather than a butter spray, but that will increase the calories and the Weight Watcher Smart Points.)
Spray a 9x5-inch loaf pan on the bottom and halfway up the sides. Spread butter on the bottom and half-way up the sides of a 9x5-inch loaf pan.
With a mixer on medium speed, beat together the eggs and the sugar.
Mix in anise seeds and the flour. The batter will be stiff.
Spread the batter into the prepared loaf pan.
Bake at 375° for 25-30 minutes or until the edges are a light brown.
With a knife loosen edges of the loaf and immediately invert the loaf onto a wire rack.
Invert loaf again onto a cutting board.
Cut loaf into 16 slices.
Place the slices flat side down on the buttered baking sheet pan.
Bake for 4 minutes or until golden brown.
With tongs, turn slices over and bake the other side for 4 minutes more or until golden brown.
Immediately remove the anise toasts from the baking sheet pan to wire rack to cool.
Store the anise toasts in a covered tin or container at room temperature.
EXTRA TIP:
VARIATION: If you'd like the anise toasts to be semi-soft, rather than hard, just bake the slices on one side instead of both sides.
