“Bisquick’s Impossible Pies by Betty Crocker have been around for decades, 7 decades now, and they are extremely popular even today. They “magically” make their own crust. I have made many, many sweet and savory Betty Crocker Bisquick Impossible Pies and I love them all! They are so fast and easy to make too. This cherry one is a favorite of my husband’s. The combination of the custard, cherries, and streusel filling is a winner! He loves it! Try this one, if you haven’t already! Enjoy!”
Makes: one 10-inch pie
INGREDIENTS:
- PIE BATTER:
- 3 cups milk
- 2 tablespoons butter, softened
- ¼ teaspoon almond extract
- 2 eggs
- ½ cup Bisquick baking mix
- ¼ cup sugar
- 1 can (21 ounces) cherry pie filling
- STREUSEL:
- 2 tablespoons butter, firm
- ½ cup Bisquick baking mix
- ½ cup brown sugar
- ½ teaspoon cinnamon
DIRECTIONS:
- Preheat the oven to 400º. Spray or grease a 10-inch pie plate.
- STREUSEL: In a small bowl, mix together the Bisquick baking mix, brown sugar, and cinnamon. Cut in the butter with 2 knives or a pastry blender until there are small pea-sized pieces. Set aside.
- PIE BATTER: In a large bowl with mixer speed on medium, beat together all the pie batter ingredients except the cherry pie filling until well-blended.
- Pour the pie batter into the prepared pie plate.
- Spoon the cherry pie filling evenly over the top of the batter. ( It will sink; that’s okay.)
- Bake for 25 minutes.
- Sprinkle the streusel mixture evenly on top of the pie.
- Bake about 10 more minutes, or until the streusel is a little browned.
- Cool on a wire rack. Cover and store in the refrigerator.
