“Pumpkin Pizzelles for the pumpkin fanatics I know! These have a mild pumpkin and spice taste, nothing overwhelming, but very good and sure to be appreciated by everyone! They are a nice change from the traditional pizzelles for the fall. You do need an electric pizzelle maker and mine is by Villaware, without Teflon, which I think makes the best delicate, thin pizzelles. Enjoy!” Makes: about 30
INGREDIENTS:
3 eggs
½ cup butter, melted
⅓ cup pumpkin puree
½ cup sugar
½ cup brown sugar
1 tablespoon vanilla extract
1 ¾ cup flour
2 teaspoons baking powder
⅛ teaspoon salt
1 teaspoon cinnamon
½ teaspoon ginger
¼ teaspoon nutmeg
¼ teaspoon cloves
½ cup walnuts, finely ground, optional
DIRECTIONS:
- Preheat the pizzelle iron.
- In a large bowl, beat together the eggs, butter, pumpkin puree, sugar, brown sugar, and vanilla. Set aside.
- In a medium bowl mix together the flour, baking powder, salt, cinnamon, ginger, nutmeg, cloves, and walnuts if you are using them.
- Add the dry ingredients to the egg mixture and mix well.
- Lightly spray the pizzelle maker with butter or oil spray and follow the directions for your pizzelle maker.
- Use a sieve to sprinkle confectioner’s sugar on the tops of the cooked pizzelles.
7. Pizzelles last for 3 to 4 weeks in an air-tight container. If they are exposed to the air for any length of time, they will absorb moisture and become soft and limp. If this happens, just heat them in a preheated 350 degree oven for about 2 minutes, or until they become crisp again.
