Cream Cheese Pie

“A cream cheese pie recipe was very popular back in the 1970’s with cherry pie filling on top.  

My version uses heavy cream in the filling which makes it softer and a glazed fresh fruit topping.  In this one I used strawberries, kiwis, and blackberries, but you can use any fruit.     Enjoy!”

Servings: 8

INGREDIENTS:

1 nine-inch baked pie crust
FILLING:
1/2 cup heavy cream
4 ounces cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1/3 cup lemon juice
1/2 teaspoon almond extract
1 teaspoon vanilla extract

GLAZED FRESH FRUIT TOPPING:
4 strawberries
2 kiwi fruits
6 blackberries
1/2 cup apple jelly
1 tablespoon water

DIRECTIONS:

1. FILLING:  In a large mixing bowl on medium high speed, blend the cream cheese and heavy cream until it is creamy.
2. Add the condensed milk, lemon juice, almond and vanilla extracts.
3. Mix until it is well-blended.
4. Pour into baked pie shell.
5. TOPPING:  In a small dish, combine apple jelly and water and heat in a microwave for 15-20 seconds until liquidy.
6. Let it cool for a minute.
7. Arrange fruit on top of pie.
8. Brush apple jelly on fruit.
9. Store pie in the refrigerator.
