 “In under ten minutes you have a gourmet shrimp and Vodka sauce that is so easy to make. I came up with this recipe to have Vodka sauce the way I like it, a bit on the sweet side, a bit spicy and lightly creamed with just a mild vodka taste.

It is easy to make and takes only a few minutes to put together. The ones you can buy in a jar are too thick, bitter,  and tasteless for me.

This is really superb! It even tastes better the next day after the flavors have melded longer so you can make the sauce a few days ahead of time. That is if you can wait. Usually I can’t and we have it right away. Enjoy!”

INGREDIENTS:

1/2 cup butter
1 teaspoon minced garlic
1/4 teaspoon ground black pepper
1/2 teaspoon salt
1 pound raw large shrimp, shelled and deveined
1 (6-ounce) can tomato paste
1/4 cup tomato sauce
2 teaspoons brown sugar
1/2 teaspoon crushed red pepper flakes
2 cups (14.5 ounce can) clam juice, or chicken stock, or water
1 cup heavy cream
3 tablespoons (1-1/2 ounces) vodka
1/2 teaspoon fresh or dried parsley 

DIRECTIONS:

1. In a large saucepan over medium high heat, saute the butter, garlic, black pepper, salt, and shrimp together for two minutes or until shrimp has turned pink.
2. Blend in the tomato paste, tomato sauce, brown sugar, and crushed red pepper flakes.
3. Stir in the clam juice . If you don’t have clam juice, use chicken stock or water. It still comes out great.
4. Stir in the heavy cream and bring it to a gentle boil.
5. Add the Vodka and stir for a minute.
6. Toss with cooked pasta. This recipe makes enough for up to one pound of pasta.
7. Sprinkle parsley on top before serving.
