Banana Walnut Cake Bars with Cream Cheese Frosting

Banana Walnut Cake Bars “Another oldie but goodie recipe that is a banana cake bar so moist and delicious, yet firm enough not to fall apart when you pick it up!

 NO steps to this one, just mix it all together!  

A great way to easily and quickly use up three overripe bananas.  

 It only has one cup of flour, so it is a low cake bar, more like the size of a brownie.     Enjoy!

Servings:  36    Bake Time: 25-30 minutes

INGREDIENTS:

CAKE:
1 cup sugar
3 very ripe bananas, mashed ( 1 cup)
1/3 cup canola oil
2 eggs
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/2 cup walnuts, chopped
 CREAM CHEESE FROSTING:
4 ounces cream cheese
1/3 butter or margarine
1 teaspoon vanilla extract
2 cups confectioners’ sugar

DIRECTIONS:

CAKE:
1. Preheat oven to 350°.
2. Grease or spray 13X9X2- inch pan.
3. In a large bowl, mix all cake ingredients together until well-blended.
4. Spread into prepared pan.
5. Bake for 25-30 minutes or until a cake tester inserted in middle comes out clean.
6. Cool on wire rack.
7. Frost with Cream Cheese Frosting.
8. Store bars in the refrigerator.
CREAM CHEESE FROSTING:
1. With your mixer, beat all cream cheese frosting ingredients together until creamy.
2. Frost the banana cake bars.
3. Optional: Sprinkle with additional walnuts on top of frosting.
